Mexican Gumbo


This is my new favorite (ok, so it has been my favorite for a while, but it takes me forever to actually post things!)

Ingredients:
4 cups chicken broth
1 T chili powder
1 T cumin
1 4 oz can chopped green chiles
4 14.5 oz cans Hunt's Fire Roasted tomatoes (chopped)
1/2 cup chopped onion
1 chipotle chile in adobo sauce, finely chopped
1 cup fresh salsa
1 cup water.

Mix all ingredients for soup.  Bring to a boil and then reduce heat and simmer.

Other ingredients:
2 cups cooked rice
1 can black beans, drained and rinsed (heated)
precooked chicken or steak
shredded monterrey jack cheese
pico de gallo
tortilla strips

Directions:
Layer the ingredients in each person's bowl as follows:  1/2 cup rice, 1/4 cup black beans, about 1 cup of soup.  Top with meat, cheese, pico de gallo, and tortilla strips. 

For me, the soup makes about 16 servings.  I have been freezing it in 4 serving portions to use later.
